I must confess; I am a little crazy when it comes to good food. It's a massive passion for me. I love it when people enjoy my cooking.
I'm such a food nut, I had to go to culinary school. After I graduated, I got a job in a restaurant where the Chef loved to make smoky, spicy food.
He, and the other Chefs and instructors I learned from, taught me a lot about food and cooking. I'd like to share that knowledge and experience with you, and have fun doing it.
I once heard a pitmaster say, "You need four things…"
Indeed these things are critical. But even within those four areas, there are so many variables. And there are other factors to take into account;
Really the key is knowledge, experience, a relaxed attitude, and rolling with the punches. Don't take yourself too seriously and have fun while you learn.
That's what learning how to barbecue is all about.
You will also discover how to select and procure the correct and freshest ingredients for the best results, which is an invaluable skill!
But more importantly, you will learn what it takes to make great barbecue because making great food is more than just having a good recipe. It's a mindset, an attitude.
It's about knowledge and experience. Knowing what works and how to pull it off, but really... it's about enjoying the tastiest, most delicious ribs, pulled pork, beef brisket or whatever else you desire, and knowing that you made it.
