I must confess; I am a little crazy when it comes to tasty food. It's a massive passion for me. I love it when people enjoy my cooking.
I'm such a food nut, I had to go to culinary school. After I graduated, I got a job in a restaurant where the Chef loved to make smoky, spicy food.
He, and the other Chefs and instructors I learned from, taught me a lot about food and cooking. I'd like to share that knowledge and experience with you, and have fun doing it.
I once heard a pitmaster say, "You need four things…"
Indeed, these things are critical. But even within those four areas, there are so many variables. And there are other factors to consider.
Really the key is knowledge, experience, a relaxed attitude, and rolling with the punches. Don't take yourself too seriously and have fun while you learn.
That's what learning how to barbecue is all about.
