How to Get Crispy Skin on Barbecue Chicken

Hi Reginald,

Thanks for asking a great question!

Tough, rubbery skin can be a challenge when cooking low and slow. Chicken skin will not get crispy or have a good bite through until it reaches a high enough temperature.

Fortunately, the fix is simple; You raise the temperature of your cooker to about 350°F (177°C) during the last 30 minutes or so of cooking.

Experiment with the time and temperature to get the results you like.
