This means I usually have some leftovers. This is one recipe that I use those leftovers in, and my family loves it.

This salad is great on sandwiches, on top of a green salad, or on some crackers. It's easy to make and best of all, it's delicious!

If you cook whole birds, you'll likely have some left over. This is a great way to use up that uneaten chicken. It's a quick, easy and delicious way to use one ingredient for something else that's tasty and creative. It's like a two for one deal!

Easy Chicken Salad Recipe

Recipe Notes: This recipe calls for 4 cups of cooked chicken. That's about half of a whole chicken.

The measurements in this recipe are all even numbers, so if you don't have 4 cups of cooked chicken, you can easily adjust the recipe to whatever you have on hand.

Using your hands to mix the salad will ensure the ingredients are combined and there are no dry spots.

This recipe makes enough chicken salad for 8 excellent sandwiches. It stays good for about 5 days in the refrigerator.

You can also use turkey or tuna instead of chicken.

  • 4 Cups ½" diced chicken
  • 1½ Cups Mayonnaise
  • 1 Cup ¼" diced celery (About three stalks)
  • ½ Cup finely diced onion, yellow or red
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  1. Add all the ingredients to a large mixing bowl.
  2. Mix the salad with your hands to combine all the ingredients thoroughly.
  3. Cover and refrigerate for at least one hour.
  4. Use to make chicken salad sandwiches or serve on a green salad with balsamic vinaigrette.
