Recipe Notes: This recipe calls for 4 cups of cooked chicken. That's about half of a whole bird. The measurements in this recipe are all even numbers, so if you don't have 4 cups of cooked chicken, you can easily adjust the recipe to whatever you have on hand.
Using your hands to mix the salad will ensure the ingredients are all combined and there are no dry spots.
This recipe makes enough filling for 8 nice sandwiches. It stays good for about 5 days in the refrigerator.
