Hi. I’m Joseph Barbour. I’m the one behind all this madness at

I must confess; I am a little crazy when it comes to good food. It’s a huge passion for me. I love it when people enjoy my cooking.

I'm such a food nut, I had to go to culinary school. After I graduated, I got a job in a restaurant where the Chef loved to make smoky, spicy food.

He, and the other Chefs and instructors I learned from, taught me a great deal about food and cooking. I'd like to share that knowledge and experience with you, and have fun doing it.

The Real Deal

Before we get ahead of ourselves, let me explain what this site is all about; the great American tradition of Real Southern Style Barbecue. And the things that go with it.

It's not cooking fast with high heat, but low and slow. It may be unlike any cooking technique you've ever used. That's okay.

It's not rocket science, you can learn how to do this.

Besides, I’ll explain it all to you so it’s easy to understand.

What's The Secret to Great Barbecue?

I once heard a pitmaster say “You need four things…”

  1. Good quality meat
  2. A good rub
  3. Smoke
  4. And time

Indeed these things are critical. But even within those four areas there are so many variables. And there are other factors to take into account;

  • Your equipment
  • The type of meat
  • How much meat
  • The weather
  • Your knowledge
  • Your experience
  • Your attitude

Really the key is knowledge, experience, a relaxed attitude and rolling with the punches. Don’t take yourself too serious and have fun while you learn.
